Biology and chemistry are sciences, adn are therefore really useful for psychology (which is also a science) as they develop scientific skills.
English Lit is an essay-based subject, and I'm pretty sure psychology involves essay, and as such English Lit can really help you develop those kind of skills, whereas if you'd taken another science you might have been lacking in that aspect.
Additionally, the fact you took English Lit as well as science shows you are a well-rounded person with multiple skills, which has to be useful.
